Makes 2 single-serve pizzas
20g large tiger prawns
2 large flatbreads or thin ready-to-heat pizza bases*
½ cup Fish in the Family Marinara Sauce*
120g Fior di latte or mozzarella cheese*
150g baby tomatoes or 1 large ox heart tomato
Chilli flakes, optional
TO SERVE
Garlic dip
Large handful fresh rocket
Basil leaves, optional
Method:
Preheat oven to 200C. Line two baking trays with baking paper. Peel and devein prawns.
Place flatbreads or pizza bases on the paper-lined trays.
Spread half the sauce over each base. Top with cheese, tomatoes and prawns. Sprinkle with chilli flakes, if using.
Bake, in batches if needed, for 10-12 minutes until the cheese is melted and the edges of the bases are golden.
To serve, transfer to a cutting board. Top with small dollops of garlic dip, rocket and basil, if using.
*Notes: Lebanese flatbreads and large pita-style breads are great for this, just make sure they are a bit thicker to hold the toppings.
Arrabbiata sauce, a tomato-based chilli pasta sauce can also be used here. For a less spicy family-friendly version use a Napolitana pasta sauce. You can use shredded cheese or cheese balls, sliced.
