Our fresh crabs are already delicious, but if you want to add even more flavour – then it is the perfect time to try Mum’s Chilli Crab recipe!

Serves 4.

  • 4 raw blue swimmer crabs, cleaned, quartered by our fishmongers
  • Can swap seafood to raw prawns, scampi or bugs.
  • 2 tbsp peanut or vegetable oil
  • 4 garlic cloves, crushed
  • 3 tsp finely grated fresh ginger
  • 1 ½ tbsp -2 tbsp sambal oelek *(to your taste)
  • 1 cup tomato passata or tomato puree
  • 2 tbsp salt reduced soy sauce
  • 1/3 cup Chinese cooking wine
  • 3 green onions (shallots), trimmed and sliced diagonally

Lightly crack the very large crab claws and set aside.
Heat oil in a large wok over medium-high heat until hot.
Add garlic, ginger and sambal oelek. Stir-fry for 1 minute
or until fragrant. Add tomato passata, soy sauce and
Chinese cooking wine. Cover and cook for 1-2 minutes
until boiling.
Add crab. Stir-fry for 2 minutes. Cover and cook for 2
minutes. Repeat covering and stir-frying until crab meat
is cooked through and the shells turn pink. Toss through
green onions and serve.

*Sambal oelek is a hot seasoning made from ground red chillies and
